In Brownie Groundhog by Susan Blackaby, Brownie wakes up in early February, predicts six more weeks of winter, and then has to outsmart a hungry fox. Great vocabulary for primary, for example: "Brownie picked up her basket and crunched across the clearing, leaving tracks in the snow. The fox scampered along beside her." Acrylic and ink illustrations by Carmen Segovia suit the story perfectly.
